I had the pork noodles (don't remember the English name), and they tasted pretty close to what I have had in Taiwan (I am from there originally). The only difference was that it didn't have as much fat in the pork, but that is probably because American pork isn't as fatty as pork in Asia. As for the Mandarin-speaking thing, the employees there are Taiwanese, I can tell by their accents. Most Taiwanese people speak Mandarin as it's the official language, but Taiwanese is the native language of most people. I went there for lunch for the first time a couple days ago.
