Cheap Eats Recipes: Meals for 3 Dollars or Less

I stumbled upon a wonderful blog called Cheap Eats that has an archive of pretty tasty recipes that you can make for less than 3 dollars.

It’s got pretty photos and some great commentary. You’ve probably created similar cheap eats recipes yourself but just haven’t really thought about it.

Next time I whip something up, I’ll try to remember to photograph it. Many of my meals can be made using ingredients from Trader Joe’s, for less than 5 dollars per meal, I’m guessing.

J. Lo’s Quick and Easy Chicken Enchilada Recipe

Over at men’s lifestyle blog, Kineda, author Tami Ng shares Jennifer Lopez’s lunch secret. She brown bags it! J. Lo has her own easy enchilada recipe for when you’re on the run. With all due respect and props to Tami and Jennifer, here’s the recipe:

Jennifer Lopez’ Easy Chicken Enchilada Recipe

Ingredients:

  • A whole wheat tortilla
  • Mixing bowl (preferably microwave safe)
  • For the filling:

  • 4 oz cooked shredded chicken breast
  • 1/4 cup light sour cream
  • 2 tbsp shredded lowfat Chipotle cheese
  • 1/4 cup pico de gallo
  • 1/8 cup enchilada sauce

Easy Banana Bread Recipe - With Sour Cream

I came back from my camping trip with some fresh-but-badly-bruised bananas. Those bruised bananas were perfect candidates for banana bread.

I had some leftover sour cream in the refrigerator, and happened upon a banana bread recipe in Allrecipes.com (my favorite recipe site for realistic, quick, and easy recipes.)

The bread turned out perfectly moist (not raw or undercooked near the bottom part of the cake) and was loved by all.

Haroset After Passover?

I know this is odd, but I sometimes crave haroset and really wish some local San Francisco delis sold theĀ Haroset stuff. Every once in a while after Passover, a co-worker may bring some homemade leftovers from home…but I don’t get enough exposure to the stuff. Maybe I should make a harder effort to be invited each year to a Passover Seder, to eat the food…but somehow I don’t think I should actually voice that as my goal. If any readers can recommend any San Francisco stores that sell pre-made, fresh haroset, let me know!
