In the “Why Didn’t I Think Of That and Get Off My Butt To Actually Do It” category, I learned of this school and concept from a timely Chronicle article.
A few friends and I have definitely attempted the informal and/or impromptu cheese sampling sessions, that somehow just go on and on and on. Eating cheese for us grubgals is like eating dim sum but instead of little bites of assorted dumpling heaven, it’s little bites of dairy heaven. Throw in some vino and a pack of Lactaid pills and we’ve got ourselves a rightful shindig. (Too much information perhaps?)

I had heard about FSC and how it was a restaurant run by the Latino Cuisine Culinary Academy, which is a program offered at the Mission Language and Vocational School around the corner. They’re only open for lunch on weekdays, so plan accordingly.
The doc and I visited this place and we weren’t disappointed. It was a little different than I expected, as this place made the list of the Chronicle’s Bargain Bites. This was no dive operation — it’s a larger simple space, with clean wooden chairs and tables. We arrived a little bit before noon on a Thursday and there were more than enough tables to spare.

What better way to get bang for buck than to eat food cooked by chefs in training? I made reservations for the buffet and eagerly starved myself all day Friday so I’d be ready for the fixins.
